In a sauce pan boil at least 2 quarters of water, add vinegar and carefully beat in eggs one by one, cook until poached 2-3 minutes, immediately transfer to a serving plate once they are ready, season with salt.
While eggs are boiling preheat a nonstick skillet to a medium low. Dice onions and sweat with butter until they get translucent.
Add ground beef to the onions, mix well and raise the heat to a medium high. Cook 7 minutes stirring occasionally until done, season with salt and pepper at the end.
While the meat is cooking slice tomatoes, avocado, cheese and plate them each next to other.
Plate the beef once it ready, garnish with arugula, splash vegetables all around with olive oil and lemon juice, season them with pinches of salt and pepper.
