Beef Stuffed Cauliflower Roasted Brains

Instructions

  • Boil a medium size pot of salted water
  • Preheat the oven to 400
  • Cut cauliflower stem off and blanch it entirely for 5-7 minutes, take out and cool down
  • In a skillet add olive oil and butter, sweat onions until golden brown
  • Transfer half of sweated onions to a mixing bowl and let it cool
  • Add minced beef, shredded cheddar, spices, flax, salt to the bowl and mix well
  • Add tomatoes to a skillet with remaining onions and simmer at low for 20-30 minutes
  • Season with Worcestershire sauce and salt to taste and keep warm.
  • Cut cauliflower from the middle and edges forming ‘brain lobes’
  • Stuff with it beef mixture between flowers and underneath
  • Roast in the oven for 30 minutes
  • Serve over tomato sauce and use some balsamic cream to stress out ‘meanders’ on the top, garnish with parsley
