Instructions

  • Heat the pan, add olive oil and fry the aubergine till golden, then remove the aubergines and set aside
  • Heat the pan, add olive oil and fry red peppers and tomatoes, with thyme and oregano
  • Add back the aubergine, and parsley / capers
  • Season with olive oil, lemon and salt
  • Top with gruyere cheese
  • Season and serve
