Instructions

  • Preheat the oven to 435F/225C then place parchment paper on 2 large baking sheet.
  • Ensure that the cauliflower is chopped roughly then add them into a food processor or a high-speed blender and blend until it looks like rice.
  • Place the blended cauliflower into a microwave safe bowl, cover the bowl then microwave for about 10 minutes.
  • Once this is done, let the cauliflower cool for a few minutes then add into a large mixing bowl.
  • Next, into the bowl containing the cauliflower, add in the eggs, 2 cups of mozzarella, oregano, garlic, salt, and pepper to taste then mix everything properly to combine.
  • Equally, divide the mixture into two and place each on both lined baking sheet then shape into pizza crust or round patties.
  • Place the baking sheets into the preheated oven then bake for about 25 minutes until it becomes nice and golden in color.
  • Next, the cauliflower patties out of the oven, add some sprinkles of the remaining mozzarella cheese, place back into the oven and bake for an additional 5 minutes until the cheese melts completely, serve.
