Instructions

  • Preheat the oven to 460.
  • Soak chia seeds in water.
  • Dice squash and mushrooms, sweat them with butter and onions in a skillet for 5 min.
  • Add diced tomatoes and lemon juice, salt to taste.
  • Mix spices and salt and rub the chicken with them from inside and outside.
  • Spread a good amount of olive oil all over the chicken’s skin.
  • Combine squash mixture with chia seeds and stuff chicken from the rare side.
  • Use a bamboo skewer to stitch the skin edges to keep stuffing sealed inside.
  • Transfer chicken belly up to a baking tin or a skillet.
  • Braise in the oven for 40-50 minutes.
