Chicken stuffed with feta, and baby leaf salad

Ingredients:
5 oz. (150g) Chicken thighs, deboned
2 Tbsp (30ml) Extra virgin olive oil
1 tsp (5ml) Paprika
1 ½ oz. (45g) Feta
Sea salt to season
1 ½ oz. (45g) Baby salad leaves
Needed:
Mixing bowl

Instructions
Preheat oven to 375ºF / 190ºC
In a mixing bowl - combine chicken thighs, olive oil and paprika, marinade for 30-40 minutes
Crumble some feta into the middle of the chicken, and “close” the chicken around the feta
Line casserole with chicken, and roast for 30 minutes, or until the chicken is cooked through
Serve chicken with paprika oil from the casserole, with some baby leaves that have been dressed with some extra virgin olive oil
