Chicken stuffed with feta, and baby leaf salad

Instructions

  • Preheat oven to 375ºF / 190ºC
  • In a mixing bowl - combine chicken thighs, olive oil and paprika, marinade for 30-40 minutes
  • Crumble some feta into the middle of the chicken, and “close” the chicken around the feta
  • Line casserole with chicken, and roast for 30 minutes, or until the chicken is cooked through
  • Serve chicken with paprika oil from the casserole, with some baby leaves that have been dressed with some extra virgin olive oil
