Instructions

  • Heat oil in a pot, add all vegetables and spices, season well with salt.
  • Cook until tender over medium heat.
  • Add chicken broth, bring to boil and let simmer for 4-6 minutes.
  • Add coconut milk.
  • Pulse in a blender until smooth, serve with some fresh herbs or onion.
  • Store in a fridge up to 5 days, re-heat in a pot over medium heat.
