Use a sharp kitchen knife to chop the cauliflower into florets then add into a food processor or a high-speed blender and pulse until rice size granules are formed. Place a frying pan over medium heat then add in the blended cauliflower.
Sauté for about five minutes until it is properly cooked.
Once cooked, take out of the heat and set aside.
In other to make the fried rice, place the eggs in a bowl, beat properly and add to the frying pan. Make sure you swirl the mixture to create a thin omelet.
Next, add in garlic and cook until it becomes fragrant.
Add in the beef and cook until it is properly cooked.
Once the beef is done cooking, add in the capsicum, half the spring onion and cook for an additional minute.
In the meantime, cut the prepared omelet into smaller cubes.
Add the cooked cauliflower, soy sauce, and the eggs into the pan and cook for a few minutes until everything is well combined. Don’t forget to stir thoroughly.
Add the rest of the spring onions, sesame seeds, and pickled ginger as garnish and serve.
