Instructions

  • Preheat the oven to 400F.
  • Layer ham slices the bottom of 4 3 inch nonstick muffin tins
  • Beat eggs in each, season with salt and pepper, add cheddar on the top. Bake for 15 minutes or until golden brown.
  • Meanwhile chop cilantro, onions and tomatoes, season and mix them with EV olive oil.
  • Let muffins cool for 5 minutes before taking them off the tins. Garnish with vegetable mixture.
