Goat’s cheese and spinach frittata

Instructions

  • Preheat oven to 375ºF / 190ºC
  • Heat saute pan and add a touch of oil once heated
  • Add spinach and stir for 1 minute, to gently wilt it
  • Add beaten eggs, and season with salt and black pepper, gently mix for 30 seconds
  • Cook over a low heat for 1 minutes
  • Scatter goats cheese over the egg mix and put pan into the oven
  • Bake for 5 minutes or until the centre is firm
  • Season and serve
