Instructions

  • Use a sharp kitchen knife to chop the scallions, jalapeños, and tomatoes into smaller pieces.
  • Place a medium frying pan over medium heat then add in the butter.
  • Once the butter melts, add in the chopped scallions, jalapeños and tomatoes and fry for about 3 minutes.
  • Using a small mixing bowl, crake in the eggs and beat.
  • Pour the beaten eggs into the frying pan and scramble for 2 minutes.
  • Next, add in the cheese and seasonings then serve.
