Ingredients:
6 Eggs
1 Scallion
2 finely chopped pickled jalapeños
1 finely chopped tomato
3 oz of Shredded cheese
2 Tbsp of Butter for frying
Salt and pepper as seasonings for taste

Instructions
Use a sharp kitchen knife to chop the scallions, jalapeños, and tomatoes into smaller pieces.
Place a medium frying pan over medium heat then add in the butter.
Once the butter melts, add in the chopped scallions, jalapeños and tomatoes and fry for about 3 minutes.
Using a small mixing bowl, crake in the eggs and beat.
Pour the beaten eggs into the frying pan and scramble for 2 minutes.
Next, add in the cheese and seasonings then serve.
