These meatballs are so easy and versatile. They pair with just about anything and can handle an adjustment of flavors and seasonings!
Start with sautéing the diced onion in a lightly oiled pan until they are completely translucent- approximately 18-20 min.
I like to use this time to get everything out and set up my station.
Heat olive oil in a skillet over medium heat.
Mix uncooked beef and pork together in a large bowl. Stir in onions, pork rinds, eggs, parsley, garlic, salt, pepper, red pepper flakes, Italian seasoning, and Parmesan cheese into meat mixture with a rubber spatula until thoroughly combined. Cover and refrigerate for about one hour.
Preheat an oven to 425 degrees F
Form meat mixture into balls that are a little bigger than a golf ball.
I choose to pre-fry my meatballs in a cast iron skillet for about 4 min on the top and bottom. This step is optional and a little messy but so worth it!
Arrange meatballs onto baking sheet lined with parchment paper. Bake in the preheated oven until browned and cooked through, about 15 minutes
Pair with fresh spiralized zucchini noodles and sugar free marinara (not included in nutrition).
