Instructions

  • These meatballs are so easy and versatile. They pair with just about anything and can handle an adjustment of flavors and seasonings!
  • Start with sautéing the diced onion in a lightly oiled pan until they are completely translucent- approximately 18-20 min.
  • I like to use this time to get everything out and set up my station.
  • Heat olive oil in a skillet over medium heat.
  • Mix uncooked beef and pork together in a large bowl. Stir in onions, pork rinds, eggs, parsley, garlic, salt, pepper, red pepper flakes, Italian seasoning, and Parmesan cheese into meat mixture with a rubber spatula until thoroughly combined. Cover and refrigerate for about one hour.
  • Preheat an oven to 425 degrees F
  • Form meat mixture into balls that are a little bigger than a golf ball.
  • I choose to pre-fry my meatballs in a cast iron skillet for about 4 min on the top and bottom. This step is optional and a little messy but so worth it!
  • Arrange meatballs onto baking sheet lined with parchment paper. Bake in the preheated oven until browned and cooked through, about 15 minutes
  • Pair with fresh spiralized zucchini noodles and sugar free marinara (not included in nutrition).
