Instructions

  • Preheat the oven to 475 or roast mode.
  • Trim pork if needed and make deep cuts with a thin knife.
  • Stuff those cuts with salt, pepper, crushed garlic cloves, rosemary and thyme sprigs.
  • Rub roast with salt and pepper and garam masala.
  • Sprinkle with a good amount of oil.
  • Transfer to a roasting skillet and roast at high for 20-25 minutes.
  • Add a cup of water to the skillet.
  • Then reduce the oven temperature to 200 and slow roast for 8 hours (overnight).
