Pork Loin Fricassee and Roast Broccoli

Instructions

  • Preheat the oven to 400F. In a baking tray mix broccoli with salt and 2 Tbsp of olive oil and roast for 25 minutes.
  • Preheat 12” skillet with 1 Tbsp of olive oil to a medium high. Trim pork loin and cut into equal cubes. Sear pork cubes until golden brown.
  • Slice mushrooms, onions and garlic. Reduce heat to a medium low, add butter to the skillet and put veggies in, sweat them for 5 minutes and season with salt and pepper.
  • Add cream and sour cream, bring to a boil and simmer for 3 minutes.
  • Transfer fricassee to a plate, top with roasted broccoli, spinach and lemon zest.
