4 large eggs
1 tablespoon olive oil
1 can tomato sauce
Fresh thyme and basil to taste
Fresh Burrata cheese or Mozzarella cheese to taste, about 2 ounces
1 ounce Feta Cheese
Start with a pan on medium and add some olive oil.
Sautee onion and garlic in the pan, then add a can of tomato sauce. Mix well, turn on low-medium.
Add some thyme, fresh ground pepper, and some fresh basil. Mix well.
Crack 4 large eggs on top of the tomato sauce then wait till the whites set in. You can cover it with a lid to make it go faster.
Once it’s almost done, add some fresh burrata cheese and some more fresh basil.
Serve up with some low carb toast or eat as is. I added some sliced avocado to the side and some feta
