Spiced broccoli soup

Instructions

  • Grate broccoli, ginger and garlic
  • Heat a small pot, add a touch of oil and saute broccoli for 3 minutes, add ginger, chilli and garlic
  • Add vegetable stock and bring to the boil, gently simmer for 10 minutes. Taste every couple of minutes and when you are happy with heat, remove the chilli
  • Take soup from heat, and cool slightly, add heavy cream
  • Blend mix in blender until you are happy with the consistency - utilising additional vegetable stock if you wish to have a more liquid consistency
  • Season and serve
