Instructions

  • Microwave spinach for 2 minutes. Let it cool down and squeeze out any extra liquid.
  • Pulse in a food processor eggs, spinach and mayonnaise until smooth. Add salt and pepper to taste.
  • Line baking sheet (10 by 10 inches) with parchment paper, grease it with some cooking spray, and pour egg mixture.
  • Bake in preheated oven for ~12 minutes (360F F). Do not let it overcook, edges should be just a bit darker.
  • When done, spread cream cheese with the spoon over the backed egg sheet, top with some caviar (chopped salted salmon can also be used instead).
  • Roll eggs with filling in a tight roll from one side. Cover with plastic wrap and refrigerate until needed. It can be stored up to 3 days.
