Grind Zucchini squash and onions with a coarse grater in a bowl. Add eggs and mix well, add soy flour, psyllium and flax mills and mix until smooth, season with salt and pepper. Let the mixture sit for 10 minutes.
Preheat nonstick skillet to a medium heat, add oil. Spoon mixture to the skillet and panfry fritters from both sides until golden brown.
