Instructions

  • Get a pan on medium heat. Spray with olive oil.
  • Add 1/3 cup finely shredded cheese in a circle. We used gouda here.
  • When the cheese starts to melt and firm up, crack an egg on top then put the lid on.
  • Cook on medium until egg whites have been set.
  • Using a spatula, gently lift up around the edges and then plate with the rest of your food.
  • We served with half sliced avocado, some ricotta and granola, and fresh cucumber slices.
