Instructions

  • Cut 2 bell peppers in half and using a spoon, cut out the inside/seeds. Set aside.
  • Grab 1 lb of grass-fed ground beef and cook on medium heat, using a wooden spatula to break it down. You can cook these with 1 tablespoon of your oil of choice. Once it is almost cooked, add a packet of taco seasoning.
  • Once the meat is almost finished, spoon a little into the bell peppers, add some shredded cheese, put some more beef on top of the cheese, then add more cheese on top.
  • Put in the oven at 425F for about 15 minutes.
  • Serve on top of a bed of your favorite greens and veggies. We used arugula, cilantro, avocado, onion, jalapeño, and served with some sour cream.
