Instructions

  • Preheat oven to 375ºF / 190ºC
  • Mix the almond flour, flaxseed meal, oregano, salt, and pepper.
  • Put the mozzarella in a microwaveable bowl - and heat for 15 seconds - do this 5 or 6 times, stirring in between until melted
  • Add dry mix to melted cheese and knead into dough-like consistency - work quickly while cheese is relatively warm
  • Roll the dough onto non-stick silicone baking mat or parchment paper, until thin
  • Bake for 5-10 minutes, until the dough starts to golden
  • Remove and portion dough into triangles, and return to oven for a couple of minutes until golden brown
  • Season and serve
