Zuchini & cheese Italian bread
3 Average size of Zuchini
2 Large of Egg
2 cloves - minced of Garlic
1/2 teaspoon of Oregano - dried
3 cups of Mozzarella - shredded
1/3 cups of Parmesan - grated
1 tablespoon + of Baking powder
1 teaspoon of Salt
1 to taste of Pepper
1 pinch of Red pepper flakes
1 teaspoon of Parsley - fresh & chopped
Preheat oven at 425F.
Grate zucchini, remove excess moisture with cheesecloth or other means.
Transfer zucchini in a large bowl, add egg, garlic, oregano, 1 cup mozzarella, parmesan, baking powder, salt, pepper, stir until completely combined.
Transfer dough on a cookie sheet covered with parchment paper.
Pat into an average thin crust, cook for approx 25 min, until golden and dried out.
Sprinkle with remaining 2 cups mozzarella.
Sprinkle red pepper flakes and parsley.
Cook for an additional 10 min; let cool and cut into 12 pieces.
Serve as is or with sugar-free tomato sauce of your choice.
